Oolong Tea, considered as one of the best teas, is characterized by its complete and partially oxidized leafs.
It has complexes flavors and aromas, categorized between green and black tea.
The brief process of fermentation of this tea, gives the flavor and fragrance that makes it special from other teas.
It has many healing properties:
• Antioxidant: due to the catechins and other flavonoids. Several studies confirm that people that drink tea regularly, have fewer cardiovascular diseases.
• Strengthens the immune system.
• Contributes in weight loss, helping to burn fats.
• Regulates cholesterol.
• Improves the hangovers.

The discovery of this tea is attributed to Wu Liang, a farmer of the 14th century (during the Ming Dinasty).
Liang was collecting tea when he saw a deer drinking water in the river. The he left the tea and he went to hunt the deer, with the hope of food for a long time. But as he went to leave the deer at home he forgot about the tea.
When he went back for his tea, it had turned dark (nowadays we know this is because of oxidation), but he brought it home anyway.
Even thinking the tea was ruined he prepared the tea as he always did.
As he started drinking it he found the different and delicious flavor of this tea.
From this moment on he started preparing tea this way. He collected the leaves, he cleaned them and he let them dry.
Then he deposited the leaves and sprouts in bamboo containers, with space for the air to enter. Here the leaves withered. Then he rolled the leaves so the oils mixed with oxygen and the fermentation started.
When the leaves turned bluish green, he left them in hot PAILAS, so the fermentation stopped and the flavor increased.
The Oolong Tea was ready!!
